Abstract: The invention introduces a post-harvest treatment that delays fruit ripening by applying nitric oxide (NO) donors encapsulated in chitosan-based polymeric nanocapsules. The system uses S-nitrosoglutathione (GSNO) as the NO source, enabling slow and controlled NO release that modulates ethylene biosynthesis—the hormone responsible for ripening. The composition maintains fruit firmness and nutritional quality, offering a sustainable, low-cost strategy for reducing post-harvest losses.
